Superfood Chocolate Mousse Pie

This is one of my favorite go-to’s, as I love chocolate mousse! It’s easy (I really only do easy recipes), tasty and nutritious!

You can make this in any version you’d like, with or with out the crust, coconut cream or toppings. I’m putting it all here together for you to decide.

 

Ingredients:

Crust:

  • 2 ½ cups soaked walnuts or pecans
  • 8 Dates, pitted and soaked in water for 15 min
  • Splash of date soaked water

Filling:

  • 3 ripe avocados, pealed & pitted
  • 5-8 dates, pitted and soaked for 15 min
  • ¾ cup of Raw Cacao Powder (or cocoa powder)
  • 1 tbl Maca Powder (optional)
  • 2 tsp Vanilla
  • 3 tbl maple syrup (or whatever sweetener you like)

Topping Ideas:

Fresh organic berries, sliced almonds, shaved chocolate…

 

Directions:

Crust:

  • Preheat Oven to 325 F
  • Mix all crust ingredients in food processor until coarsely chopped then press into pie plate.
  • Place crust in oven for 8-10 minutes and then let cool (keep an eye on it and make sure it doesn’t burn)

Filling:

  • Put avocados and pitted dates in food processor and mix well.
  • Add cacao, maca and vanilla and mix until very smooth.
  • Sweeten to taste
  • Place inside crust.

Top with your choice of fresh toppings!
